I never thought I’d become a gin connoisseur, but alas, we all have the capacity for change.

This summer, my husband and I were in a restaurant called MC Perkins Cove in Maine, sitting at the bar - highly recommend If you’re ever near Ogunquit, ME - and I noticed a bottle of this gorgeous purple liquor. When I asked the bartender, we began this conversation about gin - this conversation is rather critical to the choice of the gin that if used in this scone:

We both agreed we disliked gin until we were offered good gin. It’s well known that gin is made with juniper berries, which is a scent and taste I genuinely dislike, personally. Thus, my disdain for gin until someone introduced me to Hendrick’s Gin, which is made with more botanicals and herbs, and has some floral notes, leaving the juniper as an undernote, rather than the prominent flavor. This, along with the cucumber notes changed my tune to gin. I became an avid Gin & Tonic drinker. Now, fast forward to this moment at the bar with the purple bottle of liquor and I found my new favorite gin - Empress 1908 Gin. The gorgeous purple color comes from the fact that the gin in made with the butterfly pea flower, which brings forth an incredibly beautiful bouquet of floral and herbaceous notes, and the juniper is barely noticeable. It truly is a delightful, bright, light gin.

Empress 1908 Gin became the gin that would be the base of this Tom Collins Scone.

A Tom Collins is gin, lemon, and sugar, and I’ll give you one guess what flavors are in this scone??

Topped with a light gin infused glaze, this scone is both light and a delight; the tastes are subtle, despite the copious amount of gin that is present, and each bite will leave you wondering what exactly is behind the flavor. Before you know it, you’ll have finished a few.

Yes, these come at a price for 6 larger or 12 smaller scones, but excellent gin is used, and in heavy quantity. These babies are very much a boozy bake, and only for the 21+ crowd, and if you fall into this group, you will not be sad at your choice to indulge in these!

And I do believe they’d be a welcome addition at cocktail hour…
