Roasted Rhubarb Scones **
By all appearances, this is a humble scone, but one bite in and the flavor will surprise you as much as it does everyone! This is the glory of these Roasted Rhubarb Rye Scones.
If you’re anything like me, you’re probably making a funny face, as I did before I tried these, at the simple notion of a rye scone with rhubarb. Let me start by saying, I am not a rye flavor fan, but there are multiple flours used in this scone that balance incredibly well with the bright, tart flavor of the roasted rhubarb.
The result is a scone that is a little more dense like a muffin, but still quite moist. A lovely nutty flavor comes forth from the rye with pops of bright sweet-tart rhubarb flavor in each bite. This is a truly uniquely flavored, delicious scone, and one I always look forward to making when the rhubarb on our property comes in!
This is a seasonal recipe available only in late spring through mid-summer, the same time of year where the fruits of our labor truly come forth...this is usually first of many fruit recipes Queen Bee’s will offer where the fruit comes from our gorgeous property!
