Grapefruit (and Vanilla Kissed) Marmalade **
I have never liked marmalades -they typically have bizarrely thick pieces of peel that often have the pith (bitter white inside part) attached, and it makes the marmalade far too tart and too chunky for my personal tastes. If this sounds like you, please read on!

When I set out to make marmalades, I set out to make ones I liked.
Put it this way, I knew what I didn’t like; therefore, I take the time to painstakingly remove as much of the pith as humanly possible, and slice my peel thinly so the pieces are easy to bite.
With flecks of fruit and thin slices of peel, this grapefruit marmalade is maybe my favorite marmalade ever. Tart, brightly flavored, yet still sweet, grapefruit marmalade pairs incredibly well with the Lemon Rosemary Scones or Lemon Rosemary Muffins (coming soon!). It will simply brighten anything you want it to brighten.
Now, add vanilla beans to the same marmalade, and you have a marmalade that has a gorgeous warmth to it, that deepens all the flavors! Who knew vanilla and citrus were such wonderful friends!
