Cranberry Marmalade **
Ripe cranberries come from bogs all over northern New England. I happen to have found a haven for huge, bursting bright with tart flavor, cranberries from Vermont. Who knew, right!?
This brilliantly hued marmalade - like the cranberries themselves - create magic in a pan when combined with thinner slices of oranges. The orange sweetens the tang of the cranberries, leaving a brightly tart, yet deliciously sweet mixture. This is a delicious merriment of both the cranberry orange relish and homemade cranberry sauce that are famous on Thanksgiving tables: the bright tart flavor of cranberry and the sweet tartness of the whole orange with the consistency of homemade cranberry sauce.
