Cara Cara (and Vanilla Kissed) Orange Marmalade **
When citrus comes into season I seek out Cara Cara Oranges. If you’ve never had a Cara Cara orange, they are sweeter than a traditional navel, evoking berry and floral notes. These flavor notes lend a slightly sweeter taste to a still brightly tart, traditional orange marmalade.
Take a close look at the image…see how thinly the peel is cut? This is so the peel is easy to bite into, easy to eat with your toast or cracker. Softer. Less bitter. I lovingly remove as much of the bitter white pith as possible.
Now, add vanilla beans to the same marmalade, and you have a marmalade that has a gorgeous warmth to it, that deepens all the flavors! Who knew vanilla and citrus were such wonderful friends!
And don’t think of marmalade as simply something you slather on bread...all these marmalades would enhance any cheese board or sandwich you can imagine!
