Whoopie Pies

I’m originally from the South, and just like when my husband asked me what a Moon Pie was, I asked him what a Whoopie Pie was the first time I came to NH (forgive me, my dear Northern friends, but it’s true). But once you’ve had a really good one, you get it. Since I moved here 25 years ago, I’ve had my fair share of meh tasting ones, and I set out on a quest to make my own delicious version.

By combining the best ideas from separate recipes, I created a fluffy, intensely chocolatey cake filled with velvety, traditionally flavored (but oooo sooo much better) filling that will leave you going back for mini whoopie pie after mini whoopie pie.

I’m a peppermint gal any time of year, but especially around the holidays, the peppermint version, which swaps out the vanilla for peppermint in multiple places in the recipe, is a wonderful treat for a dessert table!

Makes about 25-30 mini whoopie pies 

Allergens: wheat, eggs, milk

I suppose I could make 15 larger ones, but hear me out: say with the mini Oreos, when you’ve eaten 20, you’ve not eaten that many because they’re so small. Right?!?!? Same concept applies here. They’re small, so you can eat more without feeling as guilty.
